Spicy Vegetable Crumble. (From S.Gunstone)
for the topping
1 Medium Onion peeled and chopped 4oz Strong Flour
1-2 cloves of garlic peeled and chopped 2 1/2 oz buttter
8 oz Carrots chopped 3oz strong cheddar cheese grated
8 oz leeks washed and sliced
8 oz parsnip chopped
1lb tomatoes chopped
1 1/2 tablespoons olive oil
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon garam massala
4 fl.oz stock
Heat oil and cook onion,carrots ,parsnip and garlic for 4-5minutes keeping veg moving to stop sticking then add leeks for a minute followed by tomatoes.
sprinkle on the spices then pour on stock. Put into a greased pie or casserol dish.meantime heat oven to 190c or 5 gas.Make topping by rubbing flour into butter then sprinkle over vegetables. top with cheese and bake for about 30 minutes. Lovely with fresh crispy rolls
